The Regulating Council on the Protection of Geographical Indications (I.G.P.) Almagro aubergines came into being under the protection of the Order of 15 July 1994 from the Department of Agriculture of CLM (Castile La Mancha) that approved its Regulations. Since its creation, the Regulating Council has worked to improve the quality of Almagro aubergines, also encouraging their promotion.

Almagro aubergines obtained the recognition of Protected Denomination (now Protected Geographical Indication I.G.P.) in accordance with Regulation CE nº 2400/96 published in the Official Gazette of the European Community nº L327 of 18.12.1996 p. 11, being the only pickled product from Spain that holds this recognition. The preparation of aubergines with Protected Denomination is governed by the norms established in its Regulations ratified in the BOE (Official State Gazette) num. 104 of 2 May 1995, the Terms and Conditions that it sets out and a Quality Manual approved by all industries. These determine each and every one of the steps that the included manufacturers have to comply with to obtain the Final Approval Certification and therefore be able to market Almagro aubergines.
