Manchego Lamb
The origin of Manchego sheep must be sought among the primitive Mediterranean sheep that formed part of the first branch of the species that adapted to dry countries, strongly dependent on seasonal climate. After their western expansion, the race acquired its own features, showing notable differences from their relatives with trunks and from there went on to their definitive settling, when the race diversified to form Spanish races (Aragonese, Castilian, Segureña and Manchego), as well as French and Portuguese.

Sheep from La Mancha are now dual-purpose sheep, milk-meat. The majority of dairy production is for the preparation of cheeses with the Manchego Cheese Guarantee of Origin.
Regarding the production of meat, like other races of sheep, its historical journey has progressed under the influence of different successive types of business. The Manchego race really took off as a producer of meat when industrial feedlots came into operation. Its considerable volume of work and experience, emphasises that Manchego lamb is the best.
That is why, in 1993 the Protected Denomination "Manchego Lamb" was created, its regulations being approved in 1995 and the first certified products entering the market in December 1998.
