The Purple Garlic of Las Pedroñeras is an ecotype from the garlic plant (allium sativum L.), belonging to the lily family and with a maturity cycle of between medium late (from 15 to 30 June) and late (from 1 July onwards).

The plant has an upstanding appearance with a strong stem reaching heights between 80 and 85 centimetres, its leaves being a strong light green.

The bulb, between medium and large in size, is composed of a variable number of purple "cloves", between 8 and 10, and is protected by a white tunic that makes up what is known as the "head of garlic".

The Purple Garlic of Las Pedroñeras has a strong smell and a spicy, stimulating flavour. These singular features come from the organosulphur composts, mainly alicina.
