Saffron from La Mancha
Saffron was introduced to Spain during the Muslim period. Since then there has been a strong historic tradition of its growth in the La Mancha region, patent in the numerous cultural demonstrations that are traditional in this area. The saffron crop has lead to its own vocabulary of great richness, also present in examples of folklore that are traditional in this region.

From a physical point of view, Saffron from La Mancha is easily distinguished because the red stigmas clearly stick out from the flower and the plant is not very long.
Saffron from La Mancha with Guarantee of Origin will always be freshly harvested saffron, since it loses quality with the years and will only be presented to the consumer cut, never ground. The strands are strong and flexible with intense bright red stigmas. Organoleptically, it is characterised by being very aromatic and by the absence of an astringent taste.
The preparation process, that consists of drying by means of slow toasting instead of in the sun, appears to be the reason why the product has a better appearance, a strong aroma, a higher content of safranal and a stronger colour.
These physical, chemical, and organoleptic characteristics are the result of the natural means, of the growing conditions and the preparation process from the soil in La Mancha.
