Gastronomy from La Mancha has been an expression of the feelings and traditions of our people as far as memory serves. The region possesses a unique gastronomic wealth, arising from the use of the resources contained in our land and hills.
Castilla-La Mancha offers a wide variety of food and wine at its 2,700 restaurant premises. Products with Castilla-La Mancha s Denomination of Origin may be enjoyed at these establishments.


 

Don Quixote’s Cuisine

Cuisine from La Mancha, made universal and legitimised by Cervantes in Don Quixote, is abundant and tasty, as varied as the geography of the region itself, and above all, hearty, as its origins can be traced to shepherds. Cuisine is based on the produce of the land, and a large part of products have a guaranteed and controlled denomination of origin.
Although it is sober, cuisine from La Mancha does not lack originality and there is an assortment of original and traditional dishes to try. The distinguishing element of the wide repertoire of recipes in Castilla-La Mancha is the seasoning used, together with the selected wine served with the food, hand-picked from the great Wine Cellars of La Mancha
